2 cups of Premium Choice Almond Meal
1 cup Premium Choice Golden Raisins chopped
75g of Premium Choice Walnuts chopped
500g carrots grated
4 eggs
2 tsp of vanilla extract 2 tsp cinnamon
1 tsp of nutmeg 60ml of olive oil 160g maple syrup
2 tsp of g/f baking powder
Cream cheese frosting:
125g cream cheese, softened
2 tsp finely grated lemon rind
1 ½ cups icing sugar
Walnuts to decorate
Method:
1. Preheat oven to 160°C
2. In a bowl add the Premium Choice Almond Meal, Premium Choice Golden Raisins and Premium Choice Walnuts, carrot, eggs, vanilla, cinnamon, nutmeg, oil, honey and baking powder and mix well to combine
3. Pour into a greased and baking paper lined 20cm baking tin
4. Bake for 1- 1 ½ hours until cooked through. Cover with foil if necessary (if browning too much)
5. Remove from the oven and let cool completely in the tin
6. Meanwhile, make the frosting by using an electric mixer or whisk to beat the cream cheese and lemon rind until smooth. Then, gradually beat in the icing sugar until smooth
7. Remove from the tin to add frosting
8. Spread frosting over cake and decorate with walnuts
9. Enjoy!
